It's April again, and as every year on 22nd we celebrate Earth Day.
For some of us, it's the only day in a whole year when we think about our planet and what we could do for it.
If you want to do something really good for the planet, you should definitely reconsider your food habits. More and more studies confirm that reducing the consumption of meat and dairy in your daily diet and swapping some products for plant-based alternatives is one of the best things you can do for the environment.
What to start with? Start with your breakfast!
English breakfast is one of those unsustainable dishes that are easy to make vegan. It's enough to make it meat-free and egg-free. Does it mean we have to skip these elements? Not at all! There are great meat-free sausages and egg replacements available in the supermarkets.
Is it difficult? Nope!

You only need between 20 to 30 minutes and two frying pans to prepare this fantastic yummy breakfast for two!

Now, seriously! This plant-based version of classic English breakfast contains everything it needs to fulfil the biggest fans of traditional food: sausages, mushrooms, baked beans and scramble!
Prepare the ingredients for two people:
1 pack of plant-based sausages
2 tbsp of coconut oil
1 package of vegan breakfast Scramble (use either vegan liquid egg such as Crackd, or vegan scramble powder from Bonsan)
1 large handful of chopped mushrooms of your choice (champignons or shitake)
10 mature cherry tomatoes
2 large handfuls of kale
1 pinch of salt
1 pinch of pepper
1 can of Baked Beans
1/2 avocado, thinly sliced
2 rye bread toasts (or any sourdough)
Optional: Some of your favourite herbs and spices (for the sausages) and coriander.
Firstly, heat a large frying pan on medium heat. Add in the coconut oil and wait until it melts. Once it has melted, add in the sausages and fry until brown. Keep warm in a low heat oven. You can also add some spices to the links. I add a bit of cumin powder, smoked paprika, salt and fresh ground pepper for a more intense flavour.
Then, add the chopped mushrooms and tomatoes to the pan and cook for 5 minutes, occasionally stirring. Keep the heat down, so the mushrooms and tomatoes cook slowly and retain all the juicy flavours.
At the same time as the mushrooms are cooking, prepare the vegan scramble on another hot frying pan and warm thoroughly. Depending on which version of egg replacer you choose - just follow the instructions on the packaging.
Finally, in a small pot, warm up the beans, toast your bread and place all the elements onto two large plates.
Serve it with the avocado slices sprinkled with sesame seeds. Fresh coriander would also make a great topping for this dish.
