The first plant-based salmon alternative, named by its creators “THE FILET – Inspired By Salmon”, is launching in supermarkets in Austria. Made by the Vienna-based food tech startup Revo Foods, the vegan salmon is thought to be the first 3D-printed food to reach supermarket shelves.
The company’s CEO, Robin Simsa, said in the statement: “With the milestone of industrial-scale 3D food printing, we are entering a creative food revolution, an era where food is being crafted exactly according to the customer needs.”
The vegan salmon is made from mycoprotein, which comes from filamentous fungi. The product is very nutritious and contains various vitamins and minerals, similar to its fish counterpart. According to the producer , the plant-based salmon is rich in omega-3 fatty acids. It contains 9 essential amino acids and vitamins A, B2, B3, B6, B12 & D2 . It’s also high in healthy plant-based protein. It contains 9.5 grams of protein per 100 grams, slightly less than the real salmon. And it is sugar-free, gluten-free and cholesterol-free.
To create this unique fish alternative, Revo Foods collaborated with another food startup, the Swedish company Mycorena, specialising in mycoprotein designed for food 3D printers.
