Clearspring Organic Japanese Lotus Root is made following the traditional methods by simply cutting the freshly harvested root and drying it. To reconstitute, soak in lukewarm water for 1-2 hours until soft. Drain and then simmer or saute alone or with other vegetables and season to taste with soya sauce.
