Cassia cinnamon is a type of cinnamon that is made from the dried inner bark of evergreen trees in Asia.

Not to be confused with other types of cinnamon as they are all different, Cassia tends to have a dark brown-red colour with thicker sticks and a rougher texture than Ceylon cinnamon.

Cassia is stronger in flavour than other types and has a warm, sweet taste and a pungent aroma.
