Organic almond flour — blanched almonds, finely milled
We mill our organic almond flour from blanched Spanish (sometimes American or Australian) almonds to a fine grind, slightly coarser than wheat flour — the grind that gives macarons their smooth shell and almond cake its moist, tender crumb. Naturally gluten-free and low in carbs: around 6g protein and 3.8g fibre per 30g serving, plus the vitamin E and magnesium almonds are known for.
Milled almonds lose freshness faster than whole nuts, so we move our flour fast, taste-test batch by batch, and pack into resealable, kerbside-recyclable pouches.
Is almond flour the same as ground almonds? Ours is milled from blanched (skinless) almonds to a fine, pale flour — what UK recipes call ground almonds and US recipes call almond flour. One product, both jobs.
Can I swap it for wheat flour? In many recipes, yes — it adds richness without an overwhelming almond flavour. Expect a moister, denser crumb; let bakes rest before turning them out, as they're more fragile.
How should I store it? Cool, dark and dry; once opened, keep it in the fridge and it lasts weeks longer.
