Plant-based company Crafty Counter has developed what it claims is the first ready-to-eat plant-based boiled eggs.

Wundereggs ingredients list is as short as possible. The plant-based egg part which is made with nuts and agar the vegan 'yolk' is made with nuts, turmeric and black salt. The company says it may use pea as a base in the future. 

The vegan eggs are cholesterol-free and contain less protein than chicken eggs. They will have saturated fat levels around the same as regular eggs and a few calories more.

Wundereggs will not contain some of the nutrients found in chicken eggs such as choline, lutein, zeaxanthin, selenium and vitamin B12, but the nutrients and vitamins will be added to the product. The company says it is working to increase protein levels without compromising taste, texture keeping using only clean ingredients. 

"We’re using a proprietary process and so we're filing a provisional patent on that,” Hema Reddy the founder of Crafty Counter told FoodNavigator-USA

Reddy who is a big fan of boiled eggs, had an idea of creating plant-based eggs when she learnt about the cruelty in the food industry. 

The food industry broiler chickens are used for meat, and laying chicks for eggs. As they can't laid eggs male chickens are culled immediately after they’re born. ​​Most of the female chicks spend their entire life in cages.  “I love eggs – my go-to breakfast was avocado toast with some hot sauce, cucumbers, goat cheese, and slice up boiled egg,” ​said Reddy. “But once you know​ [what factory farming looks like], there​ is no going back. You can't unsee it. And my mind started racing, about what can I do to help make a difference?”

Wundereggs will launch by the end of 2021 or beginning of 2022 with a price of around $5 for two ‘eggs.'

The vegan eggs will be available in high pressure processing packs featuring two ‘eggs’ and have a long refrigerated shelf-life of 90-120 days.
