One of the world's best restaurants is going vegan. The three-Michelin-starred Eleven Madison Park will only serve plant-based dishes from June.

Eleven Madison Park in one of the best and most iconic restaurants in New York City. It's signature classic dish used to be whole roasted duck with daikon and plum but the frequent customers will no longer be able to order it. The venue is set to reopen next month but with a brand new menu full of dishes without meat, fish and dairy. 

The restaurant is going completely plant-based, becoming one of the most high-profile restaurants to do so. Chef and owner Daniel Humm, wrote in a statement on the restaurant's website:

"I'm excited to share that we've made the decision to serve a plant-based menu in which we do not use any animal products -- every dish is made from vegetables, both from the earth and the sea, as well as fruits, legumes, fungi, grains, and so much more."

Once named World’s Best restaurant (2017), will launch a $335 per person, new 100% vegan tasting menu. According to the Wall Street Journal, one of the debuting meals will be a beet dish that takes 16 hours to make. The new menu will also include amaranth seed and sweet peas served with a creamy fermented almond cream and pea-miso purée.

In one of his previous interviews, Humm said that the way people eat meat is not sustainable and that he believes the future of restaurants is vegan

His latest business move also follows the increased popularity of vegan trend among consumers. More food business care more about sustainable ingredients and food practices. Lat month, the popular recipe website Epicurious, announced it would no longer publish new recipes with beef, stating beef's production causes large greenhouse gas emissions that negatively impacts the planet. 

"It is time to redefine luxury as an experience that serves a higher purpose and maintains a genuine connection to the community," Humm wrote on the restaurant's website. "A restaurant experience is about more than what's on the plate. We are thrilled to share the incredible possibilities of plant-based cuisine while deepening our connection to our homes: both our city and our planet."  Eleven Madison Park helps sustain Eleven Madison Truck launched last spring in partnership with Rethink Food. The mobile kitchen has been distributing food to those in need during the pandemic. Every meal purchased at the restaurant will provide five meals for the charity initiative. 

Eleven Madison Park with a brand new vegan menu is scheduled to reopen on 10th June.
