Ladurée - the chain of luxurious macaron shops has reformulated its traditional recipe to launch a vegan version of its signature pastries in Paris.
Ladurée shops across Paris will offer two flavours of vegan macarons: Peruvian chocolate made with 70 per cent cacao and coconut caramel.
The famous pastry chefs replaced cream and butter with a mix of millet, almond and hazelnut milk to create a plant-based ganache filling for the chocolate macaron and emulsified a mix of coconut oil, sunflower oil and soy milk to develop a vegan-friendly butter for the coconut caramel macarons.
The 158-year-old chain will also add more plant-based options to the menu in the coming months, including vegan pastries and cakes and savoury dishes.
In 2019, Ladurée converted its Beverly Hills location, to a 100 per cent vegan pastry shop offering macarons created in collaboration with chef Matthew Kenney.
In the next months, Ladurée plans to add more vegan options to all of its 80 locations worldwide.
