Black eyed beans are very easy to cook: Sort and rinse beans. Cover 1 part peas with 2 parts water and bring to a boil over high heat. Reduce heat to low and simmer, covered, until peas are soft when pierced with fork, about 60-90 minutes.

Black-eyed beans are traditionally cooked with a ham hock or bacon for flavouring; their flavour is also greatly enhanced by garlic, tomatoes, onions, and vinegar.
