We all have our own weird and wonderful ways of celebrating international occasions like Earth Month. My annual tradition is to embrace nature at every opportunity by sowing seeds in the soil, going on as many walks as possible, and helping wildlife in my back garden. I know that others like to binge-watch David Attenborough documentaries, which is a great idea, too!
But if there’s one thing that we all have in common when it comes to celebrating, it’s enjoying good food. So this Earth Month, why not experiment with a few plant-based recipes to help lower your carbon footprint and show Mother Earth some love?
The following recipes range from hearty burrito bowls to rich gnocchi ragu - I hope you enjoy!
